Mm.. you are correct bout the usage of cow brain and all that. In my country, if you need to buy chicken sausage must be really careful in choosing the right products. If you buy the 'low quality' products, you must be prepare that for producing the 'low quality' products the manufacturers must be using the cheapest meat to produce it. 'Cheapest meat' means chicken fats, internal organs and mostly consist no meat at all only adding some powders and mix well together to form sausages. I have the same thought as you do!
